Soft Caramel Truffles

Powdered Sugar 30 g
Whipped Cream 200 ml

Instructions:

Now that we have our ingredients assembled, let’s walk through the step-by-step process of making soft caramel truffles:

 

  1. Prepare the Caramel: Begin by melting the sugar in a pan over medium heat. Once the sugar has melted, add the cold butter in pieces and the whipped cream. Finally, add the instant coffee and a pinch of salt. Sieve the mixture and allow it to cool.
  2. Prepare the Dough: In a separate bowl, beat the eggs with the sugar and salt until well combined. Set aside. In another bowl, mix and sift the flour, cocoa powder, and baking powder. Gradually add the dry ingredients to the egg mixture, mixing gently until a smooth dough forms.
  3. Bake the Dough: Pour the dough into a rectangular baking tray lined with parchment paper. Bake in a preheated oven at 170°C for approximately 15 minutes, or until the dough is set and lightly golden brown. Allow the baked dough to cool completely before proceeding.
  4. Prepare the Filling: While the dough is cooling, prepare the filling by mixing together the fresh cheese (or mascarpone), vanilla sugar or extract, powdered sugar, and whipped cream until smooth and creamy.
  5. Assemble the Truffles: Once the dough has cooled, use a round cutter to cut out discs of cake. Fill each disc with a spoonful of the cheese cream and caramel mixture, then gently press the edges together to form a ball. Roll each truffle in crumbled leftover cake for added texture and flavor.
  6. Serve and Enjoy: Arrange the finished truffles on a serving platter and serve immediately, or store them in an airtight container in the refrigerator until ready to enjoy. These soft caramel truffles are best enjoyed chilled, allowing the flavors to meld together perfectly.
